After initial micro filtration/heat treatment to destroy all pathogenic and the majority of spoilage micro-organisms as well as inactivating lipase, an evaporator is used to reduce the moisture content of the liquid to between 40% and 60%, depending on the processing method. The increased solids content also means that less energy is required in the subsequent spray drying process. Evaporation also helps to remove occluded air from the liquid in order to extend shelf life.
Spray drying is used to further dry the liquid to the final solids content while controlling the particle structure and size distribution in order to reduce fines content to an absolute minimum.
