Infant Formula

The market for commercially prepared foods for infants and small children is growing fast. In addition to nutritional value, safety, flavour, colour and ease of use, modern consumers are now looking for extra convenience in terms of easy dosing, improved reconstitutional properties and dustless powders.

Challenges

  • Hygiene demands require a low content of bacteria and spores.

  • Aroma, flavour, colour and certain nutritional components can be compromised by heat treatment.

  • Easy dosing requires a uniformly low moisture content to prevent clumping.

  • Easy dissolving of the powder in water requires a uniform particle structure and size distribution.

Process
After initial micro filtration/heat treatment to destroy all pathogenic and the majority of spoilage micro-organisms as well as inactivating lipase, an evaporator is used to reduce the moisture content of the liquid to between 40% and 60%, depending on the processing method. The increased solids content also means that less energy is required in the subsequent spray drying process. Evaporation also helps to remove occluded air from the liquid in order to extend shelf life.

Spray drying is used to further dry the liquid to the final solids content while controlling the particle structure and size distribution in order to reduce fines content to an absolute minimum.

Gentle cooling using a fluid bed cooler ensures that the powder is ready for packaging.
